Recipe tryout time! Herb and Citrus Oven Roasted Chicken, yum! I found this recipe on The Comfort of Cooking Blog via Pinterest. Oh, Pinterest how I love thee! Anyway, I took some pictures as I went along to share with you all. I have to say…this recipe was super easy!
I marinated about 5 lbs. bone-in chicken thighs in the citrus juice, garlic, olive oil and spices overnight.
After marinating overnight, I removed the chicken from the fridge and placed it in a large pan along with the leftover marinade.
Here I added all the remaining ingredients: fingerling potatoes, sliced lemon, orange, onion and a good sprinkling of salt, thyme and rosemary.
Out of the oven and onto my plate
What I liked: It was inexpensive, easy to prepare and had a beautiful presentation
What I disliked: The flavor was somewhat lacking.
What I’ll change next time: I think using chicken breasts in an oven bag might be worth a try. I’ll definitely stick with the yummy fingerling potatoes and throw in some carrots for good measure
